Vegan Chocolate Protein Pancakes!!

It has taken me some time and many fails to come up with a vegan protein pancake recipe that doesn’t crumble when cooking, that doesn’t have that “protein powder texture” and most importantly tastes good! Here is the final product and its delicious!

2-3 servings

Ingredients: 

 

 

 

 

STEP 1:

Add oats and cinnamon to blender and blend to make oat flour

STEP 2:

Add everything else to the blender and blend till smooth

 

STEP 3:

Using 1/8th cup form into pancakes. Cook 4-5 mins/ side on med heat

STEP 4:

I toped mine with peanut butter between each pancake, frozen strawberries I microwaved and mashed with a fork, dried coconut and dried currents but the options are endless for toppings.

These pancakes are great to freeze and put in the toaster for a quick breakfast on a weekday or to dress up with a bunch of topping when you have some extra time.
